Ingredients
½ pan of prepared cornbread (see recipe below)
3 cups Pepperidge Farm Herb Seasoned Stuffing mix
3 stalks celery, chopped
1 large onion, chopped
1 ½ teaspoons poultry seasoning
1 ½ cans vegetable broth
3 egg replacers
½ cup vegan margarine (ex.: Earth Balance, Willow Creek)
Instructions
In a large bowl, crumble cornbread, add stuffing mix, celery, onion and poultry seasoning.
Mix together.
Add vegetable broth, egg replacer and margarine.
Mix well.
Add more broth if the mixture is too thick.
Pour into 9x13 baking dish sprayed with cooking spray.
Bake at 400 degrees for 1 hour or until browned.
